LEMON
PASTA WITH SAUSAGE AND SPINACH
Another quick recipe good for writers, readers or anyone pressed for
time.
Ingredients:
12 ounces
dried pasta
1 yellow squash or zucchini, diced
2 links turkey or chicken sausage
1 onion, chopped
1 cup nonfat chicken broth
2 tablespoons olive oil
4 cups pack fresh spinach
1 14 ounce can diced tomatoes, drained
1 tablespoon lemon juice
1/4 cup grated Parmesan cheese
salt and pepper to taste
Preparation:
Set the
pasta water to boil. Meanwhile, squeeze the sausages out of their casings
and into a large nonstick skillet. Cook over medium high heat, stirring
to break into bits. While it is cooking, add the onion and then the
squash. Cook until the sausage is browned and cooked through and the
vegetables have begun to brown. Add the chicken broth and olive oil
and boil for two minutes. Add the spinach and tomatoes, stirring constantly
until the spinach wilts. Remove the pan from heat, stir in the lemon
juice, salt and pepper. Toss the pasta in the skillet with the sausage
mixture. Stir in the Parmesan, and serve.
